Sweet & sour guacamole
A new and surprising suggestion to prepare a guacamole.
Ingredients
-1 tbsp olive oil
-1 red onion, chopped
-1 tbsp soft brown sugar
- splash red wine vinegar
-75 ml / 2½ fl oz red wine
-½ avocado, stone removed
-55g / 2oz pitted black olives
-1 tsp clear honey
Preparation
Heat the oil in a frying pan, add the red onion and brown sugar and fry gently for five minutes, or until the onions have softened. Add the vinegar and red wine and turn up the heat to boil for 4-5 minutes, until the liquid has reduced by half and has thickened. Scoop out the avocado flesh into a bowl, leaving the skin intact. Add the onion and wine mixture to the avocado flesh and mix well. Add the olives and mix again. To serve, spoon the avocado mixture back into the avocado shell and drizzle with honey.
